Pulled Pork Sandwich Buffet - My juicy and delicious pulled pork is seasoned with a homemade rub, slow smoked and finished in the oven. THEN, we serve a generous portion on Rotella’s buns with my homemade BBQ sauce (not spicy) along with two sides. My favorite combination is pulled pork with cheesy potatoes and cowboy beans. You are welcome to add pulled chicken for $1/plate extra, and any extra sides are $.50/plate extra. Choose 1 Vegetable: cowboy beans, green beans with bacon, Italian green beans, sweet corn with red peppers, buttered sweet corn or dilled spring peas.
Choose 1 Starch: cheesy potatoes, garlic mashed potatoes, scallion mashed potatoes macaroni and cheese or potato chips.
Taco Bar – We set up a buffet of flour and corn tortillas with a choice of two of the following meats: pork or chicken carnitas or carne Asada, and the following toppings: onion, shredded cheese, cotija cheese, shredded lettuce, pico de gallo, salsa rojo, salsa verde, cilantro and lime.
Choose 2 sides: tortilla chips, Spanish rice, street corn or garden salad.

Other Dinner Entrees
Pasta Bar - Two pasta shapes such as spaghetti and penne set up as a buffet with three kinds of sauce, salad, and homemade bread. Sauce choices: chicken Alfredo, Beer Cheese, Vodka Tomato Cream, Meatless Marinara or Vegetable and Meat Bolognese. $13/12/11 per person.
Chicken Tikka Masala: a slightly spicy Indian dish that has got a creamy tomato base. The spice is about a 5 on a heat scale of 1-10 but I give this dish a 10 all around. Great served with rice, potatoes, or polenta. Chicken breast portions in a tomato cream sauce with a vegetable, starch, salad, and homemade bread for $14/$13/$12 per person.
Beef Wellington with parsley potatoes and seasonal vegetables - filet of beef wrapped in mushroom duxelle and puff pastry, served medium rare with one chicken or pork option from meal package 2 or 3. $35 per person.
Beef Tenderloin Medallions with garlic mashed potatoes and bacon green beans. The filet section of beef is seared, roasted, sliced thin and drizzled with a delicious pan sauce. Served with one chicken or pork option from meal package 2 or 3; $35/34/33 per person.
Beef Bourguignon; tender chunks of beef slow cooked in a red wine tomato sauce with carrot, onion, and mushroom, served over creamy polenta or mashed potatoes with a salad and bread on the side. $15/14/13 per person.

Important Information
For all weddings I require a non refundable $200 deposit to hold the date.
I ask for a firm head count two weeks prior to the wedding date.
I provide heavy Chinet paper plates, clear flatware and white napkins with all meals.
A gratuity of 15% will be added to the bill for all buffet set ups; 20% for plated service.
